INGREDIENTS
- 300g Lakanto Chocolate Cake Mix
- 2 whole eggs
- 70g unsalted butter
- 4 tbsps full fat milk
- 1 cup thickened cream
- 60g Lakanto Pure Icing Powder
- 2 tbsps cocoa powder
- shaved chocolate
METHOD
- Preheat the oven to 180c. Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners this recipe makes about 12 cupcakes. Set aside.
- In Medium Sized Bowl Whisk the eggs and Milk. Melt the butter and then whisk the butter into the eggs. Add the Lakanto Chocolate Cake mix and whisk until it forms a smooth batter. Add the milk until the batter is smooth and slightly loose.
- Pour or spoon the batter into the liners. Fill only halfway (this is
imperative! only halfway!) to avoid spilling over the sides or sinking. - Bake for 18-21 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting.
- Once the cup cakes are cooled whisk the cream until it peaks then add the cocoa powder and icing powder until smooth. Put into a piping bag and pipe over the cupcake or cover in your desired pattern.
