Sugar Free Shortbread (99.7% Sugar-Free)

Want a sugar-free shortbread cookie recipe with only 3 ingredients? This one uses our Lakanto Icing powder, a 1:1 icing sugar replacement that doesn't go bitter when you bake it. 

No Added Sugar // Source Protein // Lower Carb

Time: 45 minutes 

Serves: 12


  • 340g of butter
  • 1 cup icing sugar replacement Lakanto
  • 3 cups all-purpose flour


  1. Preheat the oven to 160°C.
  2. In a bowl beat the butter until smooth- with an electric beater.
  3. Add the icing sugar replacement and beat through – ensure the sides of the bowl are scraped down.
  4. Add the flour and again combine slowly until it becomes crumbly.
  5. With your hands place the dough into a ball and chill for 30 minutes in the fridge.
  6. Roll to 1 cm thick and use cookie cutters to cut shapes out.
  7. Place the shapes on a tray lined with baking paper and place in the oven for 10-12 minutes or until golden.
  8. Allow to cool on the tray before serving.
